The "pesteda" is a natural flavouring from Grosio which is nowadays used in Valtellina cuisine.
In its preparation some herbs and spices such as garlic, salt, pepper, yarrow, juniper, thyme and wine are used.
It flavors boiled potatoes, vegetables, boiled meat, pasta, pizzocheri and in general the typical dishes of the local cuisine.
Here is a recipe with pesteda: THE FARMER'S SPAGHETTI
Ingredients for two people:
- 2 onions
- 2 cloves of garlic
- 2 potatoes
- parmisan cheese
- Cut the potatoes into cubes and cook them with spaghetti
- Sear the garlic in the butter with roughly chopped onions
- Drain pasta, add the Parmesan cheese and pour the butter holding garlic and onions
- Flavor with pesteda.
